- Preheat oven to 250 degrees.
- In a bowl, whisk together the fish sauce, sugar and crushed garlic. Set aside to toss wings in after they are cooked.
- Pat wings dry and toss them in a bowl in baking soda and salt mix, then place them skin-side up on a large baking sheet. Make sure you spray the rack with oil first to avoid sticking.
- Bake at 250 for 30 min to render the fat, then crank up the heat to 425 and cook for another 40 - 50 mins until golden brown and crispy.
- Remove wings from the oven and toss in the mixture and some chopped parsley.
