Beef Tomato Stew

Ingredients
  • 7-8 medium fresh tomatoes
  • 2 tbsp Oil
  • 5 Slices of ginger, Divided
  • 1 onion, medium diced
  • 2 tbsp Ketchup
  • 2 lbs. Beef chuck, cut into 1 in. cubes
  • 1 Cinnamon stick
  • 2 Star anise
  • 2 Bay leaves
  • 1 tsp Salt
  • 1 tbsp Kikkoman soy sauce
  • 1-2 tbsp, adjust to taste
  • ½ tbsp Dark soy sauce
  • 1 tbsp Dynasty Oyster Sauce
  • 2 cups Potatoes, large diced
  • 2 Fresh Tomatoes, large diced
  • 2 green onions sliced
Directions
  1. Pour hot water over the tomatoes and let them sit for a few minutes. Then, peel and chop the tomatoes into small pieces.
  2. Add the oil to a Dutch oven with a lid, medium-high heat, and add the beef pieces. Sear on each side until nicely browned. Remove beef and set aside. In the same pan, add onion and ginger. Sauté for 2 minutes, then add the Ketchup and the chopped tomatoes. Mix, cover, and bring to a boil.
  3. Once boiling, add beef and the cinnamon, bay leaf, and star anise. Then, season with salt, soy sauces, and Dynasty Oyster Sauce. Cover, lower the heat to medium-low, and simmer for 1-1.5 hours. Or until the beef is tender. Stirring occasionally to make sure nothing is sticking to the bottom.
  4. When the beef is tender, remove the cinnamon, star anise, and bay leaves and add the potato. Cook for another 10-20 minutes or until the potatoes are cooked.
  5. Finally, add the large diced fresh tomatoes. Once the tomatoes are warmed through, they are ready to be served. Enjoy!
