- Pour hot water over the tomatoes and let them sit for a few minutes. Then, peel and chop the tomatoes into small pieces.
- Add the oil to a Dutch oven with a lid, medium-high heat, and add the beef pieces. Sear on each side until nicely browned. Remove beef and set aside. In the same pan, add onion and ginger. Sauté for 2 minutes, then add the Ketchup and the chopped tomatoes. Mix, cover, and bring to a boil.
- Once boiling, add beef and the cinnamon, bay leaf, and star anise. Then, season with salt, soy sauces, and Dynasty Oyster Sauce. Cover, lower the heat to medium-low, and simmer for 1-1.5 hours. Or until the beef is tender. Stirring occasionally to make sure nothing is sticking to the bottom.
- When the beef is tender, remove the cinnamon, star anise, and bay leaves and add the potato. Cook for another 10-20 minutes or until the potatoes are cooked.
- Finally, add the large diced fresh tomatoes. Once the tomatoes are warmed through, they are ready to be served. Enjoy!
