Chirashi Sushi

Ingredients
  • Nishiki Medium Grain Rice
  • Japanese egg crepe (Kinshi Tamago), thinly sliced
  • 5-10 deveined, unshelled shrimp
  • ½ cup crab flakes
  • ¼ salmon roe
  • 5-10 parboiled snow peas
  • Shredded nori dried seaweed

Rice seasoning for 6 cups of rice:

  • 1/3 cup Nishiki rice vinegar
  • 3 tbsps sugar
  • 1 ½ tsps of salt
Directions
  1. Prepare the rice according to package instructions.
  2. Note: For every 6 cups of cooked rice: Whisk together 1/3 cup rice vinegar, 3 tbsp sugar and 1 ½ tsps of salt. Pour over the rice and combine well.
  3. Place the rice in a shallow round serving dish.
  4. Top with the fish, snow peas and thinly sliced kinshi tamago (see recipe below.)
  5. Sprinkle with shredded nori dried seaweed.
