Chukumi-style Octopus Kimchi

Ingredients
  • 180g (6.3oz) Frozen octopus , including the head
  • 1/4 Onion
  • 1-2 stalks Green onions
  • 1/4 bag Bean sprouts
  • Pizza cheese, as needed (optional)
  • Tteokbokki (rice cakes), as needed (optional)

Marinade Sauce:

  • 1 Tbsp Gochujang (Korean red pepper paste)
  • 1 Tbsp J-Basket sesame oil
  • ½ Tbsp Sugar
  • ½ Tbsp Kikkoman soy sauce
  • 1 tsp Kikkoman aji mirin
  • 1 tsp Sake
  • 2 tsp Kimchi base
  • ½ tsp Dynasty Oyster sauce
Directions
  1. Thaw the frozen octopus and cut it into bite-sized pieces.
  2. Cut the onion into 1cm (0.4in) wide wedges.
  3. Cut the green onions into 5cm (2.0in) lengths.
  4. Blanch the bean sprouts briefly.
  5. In a bowl, mix the marinade sauce ingredients, then add the onion and octopus, and toss to combine. Let it sit for 10-15 minutes.
  6. Place the marinade with the onion and octopus in a pot, heat over medium heat, and simmer until the onions become tender. Once cooked, top with blanched bean sprouts and chopped chives.
  7. Adding pizza cheese and tteokbokki will enhance the flavor.
