Eel and Arugula Pizza

Ingredients
  • 80g (2.8oz) Oceanus Unagi Kabayaki
  • 2 pieces Pizza dough (store bought or self made) - approximately 17cm (6.7in) in diameter
  • 10-15g (0.4-0.5oz) Arugula
  • 1/8 Red onion
  • 60-80g (2.1-2.8oz) Baby mozzarella cheese
  • 1 tsp Olive oil
  • Arugula (for garnish) as needed

Pizza sauce

  • 50g (1.8oz) Canned chopped tomatoes
  • 2 Tbsps Ketchup
  • ½ tsp Grated garlic
  • A pinch of Salt
  • A pinch of black pepper
  • A pinch of chili pepper
Directions
  1. Make the pizza sauce by combining the sauce ingredients in a bowl and microwave for about 30 seconds (20 seconds for 1000W microwaves).
  2. Thaw the frozen eel, cut it in half, and then slice it into 2cm (0.8in) strips.
  3. Cut the arugula into pieces about 2-3cm (0.8-1.2 in) wide.
  4. Slice the red onion thinly.
  5. Spread pizza sauce over the pizza dough, evenly distribute the ingredients from step 2, and top with baby mozzarella cheese. Bake in a toaster oven at 1200W for about 5 minutes (if using an oven, bake at 250°C/482°F for a similar amount of time). Drizzle with olive oil and garnish with fresh arugula before serving.
