Hoisin Chicken Chopped Salad

Ingredients

Hoisin Grilled Chicken:

  • ¼ cup Dynasty Hoisin Sauce
  • 8 medium garlic cloves, minced
  • 2 tablespoons Kikkoman Soy Sauce
  • 1 tablespoon peeled and grated fresh ginger
  • 2 teaspoons Dynasty Sesame Oil
  • 1 teaspoon grated lime zest
  • ½ teaspoon kosher salt
  • Six 6-ounce skinless, boneless chicken breast
  • Cooking spray

Dressing:

  • 5 tablespoons extra virgin olive oil
  • ½ teaspoon Dynasty Sesame Oil
  • ¼ cup Nishiki Rice Vinegar
  • 1 teaspoon Kikkoman Soy Sauce
  • 1 teaspoon fresh ginger, grated
  • 1 ½ tablespoons honey
  • 2 tablespoons Dynasty Hoisin Sauce
  • 2 teaspoons J Basket Roasted White Sesame Seeds

Chopped Salad:

  • ½ head Napa cabbage, shredded
  • 1 cup shredded carrot
  • ½ cup fresh cilantro, chopped
  • 1 stalk celery, diced
  • 1 avocado, sliced
  • 1 cup fried wonton strips
  • ¼ cup roasted peanuts, chopped
  • 1 bunch green onions, chopped
Directions
  1. In a large zip baggie, combine the Dynasty Hoisin Sauce, garlic, Kikkoman Soy Sauce, ginger, Dynasty Sesame Oil, lime, and salt. Add the chicken to the bag; seal. Marinate in the refrigerator for at least 2 hours, turning the bag occasionally to ensure the marinade is evenly distributed.
  2. Preheat your grill to medium heat.
  3. Remove the chicken from the bag; discard the marinade. Place the chicken on your grill rack coated with oil or cooking spray. Grill for 5 minutes on each side or until the chicken is done.
  4. Add all dressing ingredients to a small mixing bowl. Whisk thoroughly until emulsified
  5. Add cabbage, carrots, cilantro, and celery to a large bowl.
  6. Top with avocado, wonton strips, peanuts, and green onions.
  7. Drizzle the dressing over the salad to taste. Toss to combine. Top with Hoisin Grilled Chicken and enjoy!
