Peruvian Fried Rice

Ingredients

Fried Rice Sauce:

  • 1/8 cup  Kikkoman Soy Sauce
  • ¼ tsp Dynasty Sesame Oil
  • ¼ tsp. cumin
  • 1 pinch of sugar

Fried Rice:

  • ½ Tbsp. butter
  • 5 eggs
  • 3 Tbsp.  vegetable oil
  • ½ cup onions diced small
  • 1 whole red bell pepper, small diced
  • 2 garlic cloves minced
  • 1 Tbsp.  ginger
  • ¾ cup thinly sliced green onions, divided
  • 2 cups boneless/skinless chicken breast, diced into ½ inch cubes
  • 2 ½ cups cold cooked Dynasty Jasmine White Rice (preferably day-old)  
  • salt and pepper to taste
Directions
  1. In a small bowl, combine Fried Rice Sauce ingredients together and set aside.
  2. Heat butter in a wok or a large skillet over medium-high heat until melted. Add egg, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate. Wipe wok clean.
  3. Heat oil in the wok, over medium high heat. Add the red bell peppers and ½ cup of green onions. Saute until softened, about 6 minutes. Add in the garlic, ginger and green onion, saute for an additional minute
  4. Add the chicken and saute until cooked through.
  5. Add half the rice. Mix well then add the rest of the rice. Mix well. Add the soy sauce mixture. Mix well then add the scrambled eggs. Toss. Season with salt and pepper. Garnish with remaining green onions and enjoy!
