Red Curry Noodle Soup

Ingredients
  • 1 package Dynasty Bean Threads (Saifun)
  • 1 tablespoon olive oil
  • ¼ yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons red curry paste
  • 2 teaspoons tomato paste
  • 1 tablespoon soy sauce
  • ¾ cup J-Basket Coconut Milk
  • ¼ cup chicken broth
  • ½ cup fresh Thai basil leaves
  • ¼ cup fresh cilantro leaves
  • Lime wedges, for serving
Directions
  1. Cook Dynasty Bean Threads according to package instructions. Drain and set aside.
  2. Heat oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook for 1 minute. Add the red curry paste and tomato paste and cook for 1 minute, until fragrant.
  3. Add coconut milk, broth, and soy sauce. Bring to a simmer and add noodles to the skillet. Cook 2 minutes, or until noodles are tender.
  4. Serve hot, garnished with Thai basil, cilantro, and a squeeze of fresh lime juice.
