Spam Fried Rice

Ingredients
  • 1 cup Dynasty Jasmine White Rice
  • 2 Tbsp. vegetable oil
  • 1 can spam, cut into ¼ inch thick slices
  • 1 onion, finely chopped
  • 1 medium carrot, small dice
  • 2 green onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp. Kikkoman soy sauce
  • 1 tsp. Dynasty sesame oil
  • kosher salt
  • white pepper
  • 1 large egg, beaten
  • 4 oz. frozen peas
Directions
  1. Cook the Dynasty Jasmine White Rice according to the package directions. When the rice has finished cooking, fluff the rice with a fork then spread it out onto a baking sheet. Place it in the fridge to cool completely.
  2. Heat a pan over medium high heat. Add the spam to the pan and cook for about 2-3 minutes on each side until golden brown. Remove the spam from the pan and set it aside.
  3. When the rice has cooled, break the rice into individual grains. Heat a ½ tablespoon of oil in a wok over high heat. Add half of the rice to the wok and cook until the rice is slightly toasted and light brown, about 3 minutes. Remove the rice from the pan then repeat this process for the remaining half of the rice.
  4. Add all the rice back to the wok, pressing the rice up against the sides of the wok. Create a space in the middle of the wok and add another ½ tablespoon of oil to the wok. Add the onion, carrot, green onion, and garlic cloves to the center and sauté for about 1 minute until fragrant. Mix the vegetables in with the rice. Add in the soy sauce and sesame oil. Mix to combine then add in salt and white pepper to taste.
  5. Push the rice to the sides of the wok again, creating a hole in the center. Pour in the remaining ½ tablespoon of oil to the center. Add in the egg. Cook and scramble the egg then mix it in with the rice. Then mix in the peas. Remove the wok from heat,
  6. Serve the fried rice and top with spam and green onion. Enjoy!
