Summer Bean Sprout Noodle Salad

Ingredients
  • 1 package Dynasty Saifun Bean Threads
  • 2 cups bean sprouts
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • ½ cup thinly sliced red bell pepper
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped green onions
  • ¼ cup crushed peanuts

Dressing:

  • 3 Tbsp. Kikkoman Soy Sauce
  • 2 Tbsp.  Nishiki Rice Vinegar
  • 1 Tbsp.  Dynasty Sesame Oil
  • 1 Tbsp.  honey
  • 1 tsp. grated ginger
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 1 tsp. Dynasty Sriracha Chili Sauce (optional)
Directions
  1. Prep the Noodles: Place Dynasty Saifun Bean Threads in a large bowl and cover with boiling water. Let them soak for about 10 minutes until they’re soft and transparent. Drain and rinse with cold water. Use kitchen scissors to cut the noodles into more manageable lengths.
  2. 🌱 Assemble the Salad: In a large mixing bowl, combine the soaked bean threads, bean sprouts, shredded carrots, sliced cucumber, sliced red bell pepper, chopped cilantro, and green onions. Toss to mix everything evenly.
  3. 🌱 Make the Dressing: In a small bowl, whisk together Kikkoman Soy Sauce, Nishiki Rice Vinegar,  Dynasty Sesame Oil, honey, grated ginger, minced garlic, lime juice, and Dynasty Sriracha Chili Sauce if you're using it.
  4. 🌱 Pour the dressing over the salad and toss well to coat all the ingredients.
  5. 🌱 Sprinkle crushed peanuts on top for a crunchy finish. Serve immediately or chill in the fridge for about 30 minutes to let the flavors meld. Enjoy!
