1 lb boneless, skinless chicken breast or thighs, cut into 1-inch cubes
½ cup Dynasty Sweet and Sour Sauce (plus extra for serving)
1 tablespoon Kikkoman Soy Sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground ginger
1 red bell pepper, cut into 1-inch pieces
Pineapple chunks (fresh or canned), drained
Salt and pepper, to taste
Skewers (soaked in water if wooden)
Green onion, for garnish
Directions
Marinate the Chicken: In a bowl, mix 1/2 cup Dynasty Sweet and Sour Sauce, soy sauce, olive oil, garlic powder, onion powder, ground ginger, and rice vinegar (if using). Add the chicken cubes to the bowl, toss to coat, and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).
Preheat your grill to medium-high heat, or preheat your broiler if cooking indoors. Thread the marinated chicken cubes, bell pepper pieces, red onion, and pineapple chunks onto skewers, alternating between each ingredient for a colorful presentation.
Place the skewers on the grill or under the broiler. Cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Make sure the veggies are slightly charred and the pineapple is caramelized. During the last few minutes of cooking, brush the skewers with additional Dynasty Sweet and Sour Sauce for extra flavor.
Remove the skewers from the grill and let them rest for a minute or two. Serve with extra Dynasty Sweet and Sour Sauce on the side for dipping.
