Tom Kha Noodle Soup

Ingredients
  • 1 tablespoon Dynasty Sesame Oil
  • 1½ cups onion, thinly sliced
  • 1 cup sliced red bell pepper
  • 2 cups sliced Portobello mushrooms
  • 4½ cups shrimp stock
  • 3 tablespoons tom yum paste
  • 1 tablespoon Dynasty Fish Sauce
  • 1 can J-Basket coconut milk
  • 1 lime, juiced
  • 1 lb. shrimp, deveined and peeled
  • Fresh cilantro for serving
  • Bean sprouts, for serving
  • Lime wedges for serving
Directions
  1. In a large stockpot, add Dynasty Sesame Oil and bring to medium-high heat.
  2. Add the sliced onion and red pepper and saute for about 3 minutes until they begin to color and become flagrant.
  3. Add in the sliced mushrooms and cook another 2 minutes.
  4. Next, add in shrimp stock. Bring to a boil and then reduce heat to a simmer.
  5. Stir in the Dynasty Fish Sauce, tom yum paste, and coconut milk. Whisk to incorporate.
  6. Next, add lime juice and then add shrimp to the pot. Cook on simmer until shrimp is pink and cooked through (about 4 minutes).
  7. Serve with cilantro, bean sprouts, and lime wedges, and enjoy!
