- Bring water to a boil and cook the udon noodles as directed on the package. Drain and rinse with cold water. Place in the fridge to cool.
- Chop all the vegetables and place into a bowl along with the ginger dressing and toss and then add in the cold udon noodles and keep tossing.
- Garnish with fresh chopped cilantro, sesame seeds and sliced green onions.
