Udon Noodle Salad with Miso Dressing

Ingredients
  • 1 package J-Basket Udon Noodles
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrot
  • 1 cup cucumber, julienned
  • ¼ cup sliced green onions
  • J-Basket Sesame seeds, for garnish
  • 1 cup roughly chopped cilantro
  • ⅓ cup J-basket Ginger Dressing
Directions
  1. Bring water to a boil and cook the udon noodles as directed on the package. Drain and rinse with cold water. Place in the fridge to cool.
  2. Chop all the vegetables and place into a bowl along with the ginger dressing and toss and then add in the cold udon noodles and keep tossing.
  3. Garnish with fresh chopped cilantro, sesame seeds and sliced green onions.
