Yaki Udon

Ingredients
  • 2 tbsp cooking oil, divided
  • 1 package J Basket Sanuki Udon
  • ½ lb shrimp
  • Salt and pepper to taste
  • ½ medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup cabbage, shredded
  • ¼ cup carrot, julienned
  • 3 shiitake mushrooms, sliced
  • 2 green onions, chopped, plus more for garnish
  • J Basket Roasted White Sesame Seeds, for garnish

Sauce:

  • 1 Tbsp. Kikkoman Soy Sauce
  • 2 Tbsp Dynasty Oyster Sauce
  • 1 Tbsp. Kikkoman aji mirin
  • 1 Tbsp. brown sugar
  • ½ tsp red pepper flakes
Directions
  1. Season shrimp with salt and pepper.
  2. Combine all sauce ingredients in a small bowl.
  3. To prepare J Basket Sanuki Udon, soak in hot water for about a minute, and use a pair of chopsticks to carefully loosen the noodles. Rinse with cold water, drain, and set aside.
  4. Heat oil in a wok or a large pan over medium heat and add the shrimp. Cook for about 2 minutes or until opaque. Remove and set aside.
  5. Add oil to the same wok, add onion and garlic, and cook until aromatic. Add cabbage, carrot, and mushrooms, and continue to cook for 2-3 minutes.
  6. Add the cooked shrimp, J Basket Sanuki Udon, and sauce, and toss them together until the noodles are evenly coated. Add green onions and mix to combine. Garnish with J Basket Roasted White Sesame Seeds, more green onions and enjoy!
